What makes this coffee unique

This beautiful, single-origin, single-variety, honey-processed coffee comes from our premier partner farm, Los Tarrales Natural Reserve in Patulul, Guatemala. This farm, with a family heritage of conservation dating back to the 1940s, is globally renowned for its diverse birdlife and indigenous fauna harmoniously intertwined with specialty coffee production.

Our Atitlán Honey coffee, a true gem in the world of specialty coffee, is a product of Los Tarrales's meticulous and caring amber honey process. This process imparts unique flavor characteristics that set it apart from the more common washed and natural coffees, offering an intriguing and exciting taste experience.

Honey process coffees produce exotic flavors when ripe coffee cherries are de-pulped and, depending on the intensity of flavors desired, processed as black, amber, or white honey coffees. These names refer to the color that the parchment around the bean takes and are created by the amount of mucilage left on the bean before it gets set out to dry. Black honeyed coffees will keep all the mucilage, while amber and white honey coffees will ferment in water to remove some, to most of the bean's mucilage before drying on raised beds or patios. Once dried, the outer layer of parchment is mechanically removed to unsheathe the green coffee beans, which have now been naturally infused with all kinds of exciting flavors by the sugars in the mucilage.

Medium roasts, such as the one used in our Atitlán Honey, are ideal for showcasing the complex flavors often found in honey-processed coffees. This amber-honey-processed red Caturra, ecologically cultivated in the fertile soils on the southern slopes of Volcano Atitlan, offers a clean cup with bright grape juice and natural cacao notes that will surely entice any coffee enthusiast.

How we recommend to brew it

Our Atitlan Honey coffee's complex flavor is best exhibited when prepared with a pour-over such as V-60 or Chemex. You can also brew it in an automatic drip coffee maker or as a cold brew.


Before you start, be sure your coffee is fresh. For most coffees, 10-25 days from the roast date is the perfect window, and you'll typically receive your coffee shipment from us within a few days after roasting, wherever you are.

Grind the coffee to the size best suited for your chosen method. For more details, see our coffee grinding guide.

Use fresh, filtered water heated to 195°F-205°F. Too hot can scald the coffee; too cool may not extract all the flavor. To enjoy all this coffee has to offer, we suggest 198°F.

Pro Tips

  • Magnesium-rich water helps extract coffee's more nuanced flavors. To learn more, see Scott Rao's excellent water guide.
  • Weigh your coffee and water. For best flavor, maintain a 15:1 to 17:1 ratio of water to coffee. With our Atiltan Honey coffee, using a 16:1 ratio will showcase its complexity (in this case, 20 grams of coffee to 320 grams of water).
